Thai tea custard ingredients

  • 8 tablespoons of Thai tea powder
  • 200 ml water
  • Unsweetened Condensed Milk 440 g.
  • 4 eggs
  • 100 grams of sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon tapioca starch
  • 1/2 teaspoon salt
  • Butter 40 g
     

Bread flour ingredients

  • Bread flour (for making fermented dough) 50 g
  • Water 50 g
  • 4 grams of yeast (or about 1/2 + 1/4 teaspoons)
  • 200 grams of bread flour
  • 50 grams of sugar
  • 2 grams salt (or a pinch)
  • Eggs (No. 2) 1 pc.
  • Fresh milk (room temperature) 110 g
  • 25 grams of melted butter
     

How to make Thai tea custard filling    
1. Mix Thai tea powder with water.
     2. Mix evaporated milk and egg together. Add granulated sugar, corn starch, tapioca starch, salt and Thai tea. Stir together to combine.
     3. Stir until homogeneous. Then add butter to it. Mix well again.


How to make Thai tea custard buns

     1. Mix bread flour (50 grams), water and yeast together. Cover with plastic preservation. Set aside to double the flour for about 30-60 minutes.
     2. Mix eggs and milk, stir well.
     3. Mix 200 grams of bread flour with sugar. And salt to combine. Pour the egg and milk mixture into it. Followed by fermented flour Knead well until smooth. Pour the melted butter and knead until smooth.
     4. Roll the bread dough into a round ball and let the dough rise twice.
     5. Bake at 175 degrees Celsius on the lower heat for about 15-20 minutes. Set aside. Let cool.
     6. Put the filling in Thai tea bag. Then squeeze into the center of the bread ready to serve.
